Back in the days when I used to work for a living, I spent a lot of time in the New England area of New South Wales. Though I enjoyed the area from the start, it was only after I'd been around the precinct for years that I really came to appreciate it; to see the side that tourists rarely visit; to know the locals and why they have a love affair with bitterly cold winter days and sometimes drought-ridden paddocks.
There is so much in this area; waterfalls of significance that few have ever seen; vistas over canyons that visitors have never heard of; and a wealth of attractions that you would need months to see

Dairy made

Green pastures dotted with black and white cows are a feature of the beautiful scenery in the south west of WA, where dairy farming is an important industry. Each dairy cow produces about 6000 litres of milk per year, and in WA more than half of the state's total milk production is sold as fresh milk. But that still leaves a lot of milk to be turned into cream, butter, cheese, yoghurt or ice cream.
Boutique cheese outlets can now be found in many parts of the south west of WA and their produce is becoming popular with the increasing trend to buy locally produced food. Cheese production requires fresh, un-homogenised milk, so small-scale cheese makers are mostly found in country areas where there is a supply of local milk.
Walls of the wilderness

Heaven is as near as the Walls of Jerusalem, but not the centuries-old walls that encircle the troubled Biblical city, nor the after-world common to the faiths that uneasily share it. This is an earthly paradise protected by fantastic ramparts raised by other than human hands.
Locating this 'heaven on earth' is easy: just run your finger about 70km south from Devonport on a map of Tasmania. Getting there is more challenging, but a few hours on foot hefting 15-odd kilograms of camping gear and provisions doesn't even rate on the pain-to-gain scale when it delivers you to Walls of Jerusalem National Park
